Banana oat blender pancakes

Method

  1. Put the banana, eggs, oats, milk, baking powder, cinnamon and salt in a blender. Blitz until completely smooth, about 1 minute. Let it sit while the pan heats so the oats thicken the batter slightly.

  2. Heat a large non-stick frying pan over medium-low heat and melt a knob of the butter.

  3. Pour in 3 tablespoons of batter per pancake, leaving room to flip. Cook until bubbles appear on top and the edges look set.

  4. Flip carefully and cook until golden and springy in the middle. Keep warm on a plate while you cook the rest, adding butter as needed.

  5. Stack, top with banana slices and blueberries, and drizzle with maple syrup.

Tips

  • These brown faster than flour pancakes because of the banana, so keep the heat gentle.
  • Use a very spotty banana for the sweetest batter. Made with certified gluten-free oats, they're gluten-free.
