SaveBison burgers with caramelized onions and cheddar
Juicy bison burgers seared in a hot skillet and topped with sharp cheddar, quick jammy onions and a smoky mayo on toasted brioche buns. Bison is leaner than beef, so a little grated onion and a gentle hand keep the patties tender, and dinner is on the table in 20 minutes.

Heat 1 tablespoon of the oil in a large skillet over medium-high heat. Add the sliced onion and ½ teaspoon salt and cook, stirring often, until soft and browned at the edges, about 6 minutes. Stir in the brown sugar and water for the last minute, then scoop the onions into a bowl. Keep the skillet.
While the onions cook, gently mix the bison, grated onion, Worcestershire, pepper and garlic powder with your fingertips, just until combined. Shape into 4 patties about ¾ inch thick, press a shallow dimple into the center of each and sprinkle both sides with salt. Stir the mayonnaise and smoked paprika together.
Add the remaining 1 tablespoon oil to the hot skillet. Cook the patties over medium-high heat until well browned, about 3 minutes, then flip.
Cook 3 to 4 minutes more, until an instant-read thermometer in the center reads 160°F. Lay a slice of cheddar on each patty for the last minute and cover the pan so it melts.
Move the burgers to a plate and toast the buns cut side down in the skillet for about 1 minute. Spread the smoky mayo on the buns and build the burgers with the cheddar patties and caramelized onions.
Tips
- Bison is much leaner than beef, so handle the meat as little as possible and do not press the patties while they cook, or the juices run out and they turn dry.
- Cook ground bison to 160°F, the safe temperature the USDA gives for ground meat. Because it is lean, it gets there a little faster than beef, so start checking after 6 minutes total.
- Ground bison is sold in many supermarkets next to the ground beef, often in 1-pound packs. These burgers also work on a grill over medium-high heat with the same timing.
