Our take on the Chick-fil-A chicken sandwich: crisp chicken with a pickle-brine tang and a hint of sweetness, on a buttered toasted bun. Under 20 minutes.

Method
Pour the oil into a large heavy frying pan to a depth of about 5 mm and set over medium heat to warm while you prep. Keep an eye on it and turn it down if it starts to smoke.
Slice the chicken breast horizontally into two thin fillets. Cover with baking paper and pound with a rolling pin or the base of a pan to an even 1 cm thick.
Whisk the egg, pickle brine and milk in a shallow bowl. In another, mix the flour, icing sugar, paprika, garlic powder, salt and pepper. Dip each fillet in the egg, then press firmly into the flour to coat all over.
Check the oil is ready: a pinch of flour should sizzle straight away (about 175°C). Lay the chicken in, away from you, and fry until deep golden underneath.
Flip and fry until the other side is golden and the chicken is cooked through, with clear juices and no pink in the thickest part (74°C on a thermometer). Drain on paper towel.
While the chicken fries, butter the cut sides of the buns and toast them, butter-side down, in a second dry frying pan over medium heat until golden.
Put 4 pickle slices on each bottom bun, add the chicken and close with the top bun.
Tips
- The flavour comes from three small things: pickle brine in the egg wash, a little icing sugar in the coating, and frying in peanut oil. A pinch of MSG in the flour gets you closer still.
- Pounding the chicken to an even 1 cm is what makes it cook through in 6 minutes. If your fillets are thicker, give them an extra minute a side and check the middle.
- Fry one fillet at a time if your pan is small, so the oil stays hot and the coating stays crisp.
