Method

  1. Put the noodles in a large bowl, cover with boiling water from the kettle and gently loosen with chopsticks, then drain well.

  2. Mix the soy sauce, oyster sauce, sugar, sesame oil and white pepper. Slice the onion and celery and shred the cabbage.

  3. Heat the oil in a wok or large frying pan over high heat. Stir-fry the onion and celery until just softened at the edges.

  4. Add the cabbage and garlic and stir-fry until the cabbage wilts but still has some crunch.

  5. Add the noodles and sauce and toss with tongs until the noodles are hot, glossy and evenly coloured.

Tips

  • Lots of cabbage and celery with a slightly sweet soy sauce is what makes it taste like the original. Keep the heat high so the veg stays crunchy.
  • Look for fresh yakisoba, chow mein or thin hokkien noodles in the fridge section of the supermarket.
  • Serve it as a side to copycat orange chicken, or add sliced chicken or tofu to make it a meal on its own.
