Method
If you're brewing the green tea, steep the tea bag in the hot water, then remove it and top up with cold water to cool it down.
Meanwhile, put the fresh strawberries and sugar in a large jar or cocktail shaker and mash them to a rough pulp with a muddler or the end of a rolling pin.
Add the grape juice and green tea and stir. Strain through a sieve into a pitcher if you want it smooth, pressing on the pulp, then return it to the jar.
Add the coconut milk and a handful of ice, seal and shake hard for 15 seconds until frothy and evenly pale pink.
Fill two tall glasses with the rest of the ice, scatter the freeze-dried strawberries over the ice and pour in the drink. Serve right away.
Tips
- The original's base is a strawberry acai refresher with a little green coffee extract. White grape juice plus green tea gets the same light, fruity, faintly grassy taste at home; a splash of passion fruit juice adds the tropical note.
- Shake the coconut milk in rather than stirring: the foam is what gives it the soft, creamy look.
- Freeze-dried strawberries are in most US supermarkets near the dried fruit or snacks. They turn soft and deep pink as they soak.
