Method
Take the ice cream out of the freezer and let it soften on the bench while you put two glasses in the freezer and get everything else ready.
Pour the milk into a blender, then add the cocoa, icing sugar and vanilla. Blitz briefly so the cocoa dissolves without lumps.
Add the ice cream and blend in short pulses, scraping down the sides once, just until smooth and thick enough to hold a soft peak. Overblending melts it into a milkshake.
Spoon into the chilled glasses and serve straight away with spoons and, if you like, a side of hot chips for dipping.
Tips
- The original is lighter on chocolate than a typical shake, which is why this uses vanilla ice cream and only a little cocoa. Add another tablespoon of cocoa if you want it darker.
- If it's too runny, add another scoop of ice cream and pulse once or twice; if it's too thick to blend, add milk a tablespoon at a time.
- Full-cream milk and a creamy ice cream give the closest texture. Light ice cream turns icy.
