Method

  1. Unwrap the cream cheese, put it in a mixing bowl and microwave for 15 to 20 seconds until soft but not melted. Add the powdered sugar, vanilla and cream and beat with a hand mixer until smooth and fluffy.

  2. Lay the graham crackers edge to edge on a sheet pan or serving board in a rectangle, 3 rows of 4, with no gaps.

  3. Spread the frosting evenly over the whole rectangle, right to the edges, so it glues the crackers together.

  4. Hull the strawberries and slice them thinly. Rinse the blueberries and pat them dry.

  5. Fill the top left corner (about a third of the width and half the height) with blueberries packed close together. Then lay the strawberry slices in overlapping rows to make red stripes across the rest, leaving even white bands of frosting between them. Cut into squares along the cracker lines to serve.

Tips

  • Serve within an hour or two of making it, and keep it in the fridge until then. The crackers slowly soften under the frosting and the cream cheese doesn't like hot sun.
  • Prefer a cookie base? Use a large store-bought sugar cookie or cookie cake from the bakery and make a round flag-style pizza instead.
  • Pat the fruit very dry so the juice doesn't bleed pink streaks into the white stripes.
