Method

  1. Pat the salmon dry with paper towels and season lightly with salt and pepper. Whisk the honey, soy sauce, lemon juice and garlic in a small bowl.

  2. Heat the oil in a large nonstick or cast-iron skillet over medium-high heat. Lay the salmon in, flesh side down (skin up), and sear without moving until a golden crust forms.

  3. Flip the fillets and turn the heat to medium. Cook until nearly done.

  4. Pour the glaze around the salmon. Let it bubble, spooning it over the fillets again and again, until it thickens to a sticky glaze and the salmon reaches 145°F in the thickest part and flakes easily.

  5. Serve with the glaze from the pan spooned over and scatter with scallion and sesame seeds.

Tips

  • Turn the heat down before adding the glaze: honey burns quickly over high heat.
  • Serve with microwave rice and steamed broccoli or green beans for a complete dinner.
  • For gluten-free, use tamari instead of soy sauce.
