Method

  1. Pulse the vanilla wafers in a food processor until they're fine crumbs, then add the pecans and pulse until finely ground.

  2. Add the 60 g powdered sugar and cocoa and pulse to mix.

  3. Add the corn syrup and rum and pulse until the mixture clumps together and holds when pressed between your fingers.

  4. Roll into 1-inch balls, about 1 heaped tablespoon each; you should get about 24.

  5. Roll each ball in the remaining powdered sugar until well coated. Serve right away or store in an airtight container.

Tips

  • They're ready to eat right away. If you chill them for an hour or two they firm up and the rum flavor mellows, but it isn't required.
  • These are made with uncooked rum, so they're for adults only. For a kid version, swap the rum for orange juice plus 1/2 teaspoon rum extract.
  • If the mixture is too dry to hold, add more rum a teaspoon at a time; too sticky, pulse in a few more wafer crumbs.
