The recipe in 15 seconds

Method

  1. Slice the zucchini into 1/4-inch rounds and pat them dry with paper towels.

  2. Beat the egg in a shallow bowl. In a second bowl, mix the panko, parmesan, garlic powder and salt.

  3. Dip each round in egg, let the extra drip off, then press into the crumb mix to coat both sides.

  4. Mist the basket with cooking spray and lay in half the rounds in a single layer, not touching. Spray the tops lightly. Air fry at 400°F for 7 to 9 minutes, flipping halfway, until deep golden and crisp.

  5. Repeat with the second batch, then serve hot with the warm marinara for dipping.

Tips

  • Air fryers vary: oven-style models and smaller baskets may need 2 to 3 minutes more. Check early the first time.
  • Slice evenly, ideally with a mandoline, so every chip crisps at the same time.
  • They are crispest right away. Reheat leftovers at 375°F for 2 to 3 minutes rather than in the microwave.
