Method
Put the brown sugar, water and cinnamon stick (if using) in a small saucepan.
Set over medium heat and stir until the sugar dissolves completely.
Bring to a gentle simmer and let it bubble, stirring now and then, until it's slightly syrupy and smells of caramel.
Take off the heat, stir in the vanilla and salt, and lift out the cinnamon stick. It will look thin but thickens as it cools.
Use warm right away or pour into a clean glass jar. Add 1 to 2 tbsp to iced coffee, a shaken espresso with oat milk, or a hot latte.
Tips
- Keep it in a sealed jar in the fridge for up to 1 month. Give it a stir before using if any sugar settles.
- For a quick cinnamon version without a stick, whisk in 1/4 tsp ground cinnamon at the end; it will settle, so shake before each use.
- Most brown sugar is vegan, but some cane sugar is filtered with bone char. If that matters to you, look for a brand labeled vegan or organic.
