Cinnamon apple porridge
Creamy oats cooked with grated apple and cinnamon, topped with buttery caramelised apple slices and toasted walnuts. Ready in 15 minutes.

Method
Coarsely grate half the apple, skin and all, and thinly slice the other half, discarding the core.
Put the oats, milk, water, grated apple, ¾ teaspoon of the cinnamon and the salt in a saucepan over medium heat. Bring to a simmer, then cook, stirring often, until thick and creamy.
Meanwhile, melt the butter in a small frying pan over medium heat. Add the apple slices, walnuts, brown sugar and remaining cinnamon and cook, turning once, until the apple is golden and just tender.
Take the porridge off the heat and let it stand for a minute; it thickens as it sits. Add a splash more milk if you like it looser.
Spoon into bowls and top with the caramelised apple, walnuts and any buttery juices from the pan.
Tips
- Microwave version: combine the porridge ingredients in a large bowl (it bubbles up), cook on high for 2 minutes, stir, then 1 to 2 minutes more.
- Pears work just as well as apples. Use certified gluten-free oats if you need it gluten-free.
