Method

  1. Start the espresso or brew the coffee extra strong so it's ready when the milk is.

  2. Put the pumpkin puree, sugar and pumpkin pie spice in a small saucepan over medium heat. Cook, stirring, until it bubbles, darkens slightly and smells toasty.

  3. Whisk in the milk a little at a time so it stays smooth, then heat, whisking often, until steaming hot with small bubbles at the edge. Don't let it boil.

  4. Take off the heat and stir in the vanilla. Whisk hard for 30 seconds, or use a handheld milk frother, until foamy on top.

  5. Divide the espresso between two mugs and pour the pumpkin milk over it. Top each with whipped cream and a pinch of pumpkin pie spice.

Tips

  • Cooking the pumpkin and spice before adding milk is what gives it that rich, rounded café flavor rather than a raw, vegetal one. For a smoother drink like the original, pour the milk through a fine sieve before it goes in the mug.
  • Skip the whipped cream and use oat milk plus a dairy-free topping for a dairy-free version.
  • Freeze leftover pumpkin puree in 4-tablespoon portions in an ice cube tray for the next batch.
