Our take on the Taco Bell Crunchwrap Supreme: spiced beef, cheese sauce and a crunchy tostada sealed in a toasted tortilla. Crisp, melty and quick.

Method

  1. Heat 1 teaspoon of the oil in a large frying pan over high heat. Add the mince and brown it, breaking it up with a spoon, until no pink remains, while you shred the lettuce and dice the tomato.

  2. Stir in the taco seasoning and water and simmer until thick and saucy with no liquid pooling. Tip into a bowl and wipe out the pan.

  3. Warm the large tortillas in the microwave for 20 seconds so they fold without cracking. Lay one flat, spoon half the mince into a circle the size of the tostada in the centre, then top with half the cheese sauce and a tostada shell.

  4. Spread the tostada with half the sour cream, then add half the lettuce, tomato and grated cheese. Lay a small tortilla on top, then fold the edges of the large tortilla up and over it in overlapping pleats, pressing to hold. Repeat with the second one.

  5. Heat 1 teaspoon of the oil in the pan over medium-high heat. Add a crunchwrap seam-side down and press with a spatula; cook for about 90 seconds until golden and sealed, then flip and toast the other side.

  6. Toast the second crunchwrap the same way with the last teaspoon of oil, keeping the first warm on a board. Cut each in half and eat while the outside is crisp.

Tips

  • The taste comes from the layering: warm seasoned beef and cheese sauce underneath, cold sour cream and lettuce on top, with the tostada keeping the two apart and adding the crunch.
  • No small tortillas? Cut a 15 cm circle from a third large tortilla, or use any tortilla scraps to cover the gap in the middle.
  • If you have two frying pans, toast both at once and shave about 3 minutes off.
