Jack-o'-lantern quesadillas

Method

  1. Heat the oven to 425°F (it takes about 10 minutes) with racks in the upper and lower thirds. Brush 2 large baking sheets with half the oil.

  2. While it heats, cut faces into 4 of the tortillas with a small sharp knife: 2 triangle eyes, a triangle nose and a wide zigzag mouth. Keep the holes small, about 3/4 inch, so the cheese stays put.

  3. Lay the 4 whole tortillas on the sheets, 2 per sheet. Toss the cheeses together. Sprinkle half over the tortillas, scatter the beans and cumin on top, then finish with the rest of the cheese, keeping a thin border clear.

  4. Lay the face tortillas on top, press down gently and brush with the remaining oil.

  5. Bake until the tortillas are crisp and golden and the cheese is melted and bubbling through the faces, swapping the sheets halfway.

  6. Let them sit for a minute, then serve whole so the faces show, with salsa and sour cream on the side.

Tips

  • Use the cut-out tortilla bits too: bake them alongside for a few minutes as little chips.
  • No beans in the house? Use all cheese, or swap in shredded rotisserie chicken (then it's not vegetarian).
  • For a fancier face, cut a stem shape at the top of the tortilla too and lay a strip of green bell pepper there before baking.
