Method

  1. Spread 2 tbsp marinara over half of each tortilla, leaving a 1/2-inch border. Scatter a quarter of the mozzarella over the sauce, top with a quarter of the pepperoni and a pinch of Italian seasoning, then fold the bare half over and press down.

  2. Heat a large skillet over medium heat and melt half the butter. Add 2 quesadillas and cook until the underside is golden and crisp.

  3. Flip carefully with a wide spatula and cook until the second side is golden and the cheese has completely melted.

  4. Move to a board and repeat with the remaining butter and quesadillas. While they cook, warm the rest of the marinara in the microwave until hot, about 45 seconds.

  5. Let the quesadillas sit for a minute so the cheese sets a little, then cut each into 3 wedges and serve with the warm marinara for dipping.

Tips

  • Don't overfill: too much sauce makes the tortilla soggy and the filling slides out when you flip.
  • Keep the first batch warm on a baking sheet in a low oven, or just serve as they come off the pan.
  • Swap the pepperoni for cooked sausage, diced ham, or chopped bell pepper and olives for a vegetarian version.
