Method

  1. Pat the tofu dry with a paper towel, pressing gently to squeeze out excess water. Crumble it with your fingers into bite-size pieces, some big and some small, like scrambled eggs.

  2. Heat the oil in a large nonstick skillet over medium heat. Add the onion and bell pepper and cook, stirring, until softened, about 3 minutes. Add the garlic and cook 30 seconds more.

  3. Add the crumbled tofu, turmeric and cumin and stir until the tofu is evenly yellow. Cook, stirring every so often, until it is hot and any liquid has cooked off, about 4 minutes.

  4. Sprinkle in the nutritional yeast, salt and pepper, then pour in the soy milk and stir until the scramble looks creamy, about 30 seconds.

  5. Add the spinach and fold it through just until wilted, about 1 minute. Taste for salt, scatter with chives and serve right away.

Tips

  • Firm or extra-firm tofu gives the best egg-like texture; silken tofu turns mushy.
  • Kala namak, also called black salt, has a natural sulfur flavor that tastes surprisingly like eggs. Add it at the end so the flavor stays bright.
  • Serve it with toast, tucked into warm tortillas with salsa, or next to sliced avocado. Leftovers keep 3 days in the fridge and reheat well in a skillet.
