Heat the air fryer to 400°F. Slit each date open along one side and pull out any pit left inside.
- 16 Medjool dates
Push about ½ teaspoon of goat cheese into each date and pinch it closed.
- 2 oz goat cheese
Wrap each date tightly in a half slice of bacon, ending seam side down. Use a toothpick if a piece won't stay put.
- 8 slices bacon
Lay the dates seam side down in the basket in one layer, not touching. Air fry for 5 minutes.
Turn them over and air fry 4 to 5 minutes more, until the bacon is browned and crisp.
Brush with the maple syrup if you like, grind over black pepper and let them cool for 2 minutes before eating. The filling is very hot.
- 1 tsp maple syrup
Tips
- Regular-cut bacon crisps in the time; thick-cut stays chewy around a date.
- Swap the goat cheese for blue cheese, cream cheese or a whole almond.
- Wrap them up to a day ahead and keep them covered in the fridge, then air fry when guests arrive.
