Method

  1. Heat the air fryer to 380°F. Stir the brown sugar, maple syrup, cayenne and black pepper into a thick paste.

    • 3 tbsp light brown sugar
    • 1 tbsp maple syrup
    • ¼ tsp cayenne pepper
    • ¼ tsp black pepper
  2. Lay the bacon in the basket in a single layer (cut the slices in half if they don't fit, or cook in two batches). Air fry for 5 minutes.

    • 8 slices thick-cut bacon
  3. Brush the top of each slice with half the glaze and air fry for 3 minutes.

  4. Turn the slices, brush with the rest of the glaze and air fry 2 to 3 minutes more, until deep mahogany and bubbling. Watch closely at the end; sugar burns fast.

  5. Move the bacon to a wire rack or parchment and let it cool for 2 minutes. It crisps as the glaze sets.

Tips

  • Line the bottom of the basket (not the slices) with a piece of foil to catch sugary drips.
  • Don't cool it on paper towels; the glaze sticks. Use a rack or parchment.
  • Chop it over pancakes, salads or vanilla ice cream, or serve it on a brunch board.
