Method

  1. Preheat the air fryer to 400°F for 2 minutes. Pat the chops dry and rub them with the olive oil.

  2. Mix the brown sugar, smoked paprika, garlic powder, onion powder, salt and pepper and press it onto both sides of each chop.

  3. Lay the chops in a single layer with space between them; don’t crowd or overlap. Air fry at 400°F for 9 to 11 minutes, flipping halfway, until browned and caramelized and the center reads 145°F.

  4. Rest for 3 minutes before serving so they stay juicy.

Tips

  • Air fryers vary: oven-style models and smaller baskets may need 2 to 3 minutes more. Check early the first time. Thinner 1/2-inch chops need only 6 to 8 minutes.
  • Bone-in chops work too; add 2 to 3 minutes and check the temperature near the bone.
  • Serve with applesauce or a drizzle of barbecue sauce. Reheat leftovers in the air fryer at 350°F for 3 to 4 minutes.
