The recipe in 15 seconds

Method

  1. Preheat the air fryer to 400°F for 2 to 3 minutes. Pat the steak dry and toss with the olive oil, salt, pepper and garlic powder.

  2. Spread the cubes in a single layer with a little space between them; don’t crowd the basket. Air fry at 400°F for 6 to 8 minutes, shaking halfway, until well browned. For medium-rare, pull them at 130 to 135°F; add 1 to 2 minutes for medium.

  3. While the steak cooks, microwave the butter and garlic in a large bowl for 30 to 45 seconds, until melted and sizzling.

  4. Toss the hot steak bites in the garlic butter, scatter with parsley and serve right away.

Tips

  • Air fryers vary: oven-style models and smaller baskets may need 2 to 3 minutes more. Check early the first time. Check a center cube with a thermometer at 6 minutes.
  • Sirloin is affordable and tender; ribeye or strip work too. Avoid stew meat, which stays chewy.
  • Serve over mashed potatoes or with a side of steakhouse sauce. Reheat leftovers at 350°F for 2 minutes so they stay pink.
