Air fryer sweet potato fries

A light dusting of cornstarch helps these thin sweet potato fries crisp up instead of going limp. Smoked paprika and chili powder give them a sweet-smoky edge.

The recipe in 15 seconds

Method

  1. Cut the sweet potato into 1/4-inch-thick fries. Keeping them thin and even is what gets them crisp in time.

  2. Pat dry, then toss with the cornstarch until lightly dusted. Add the oil and spices (hold back the salt) and toss again.

  3. Air fry at 400°F in a single layer, not overlapping more than a little, 10 to 12 minutes, shaking the basket every 4 minutes. They are done when browned at the tips and crisp at the edges.

  4. Toss with the salt right away and let sit 1 minute; they crisp more as they cool.

Tips

  • Air fryers vary: oven-style models and smaller baskets may need 2 to 3 minutes more. Check early the first time.
  • Sweet potato fries go from browned to burnt fast because of their natural sugar, so check them in the last 2 minutes.
  • Dip in chipotle mayo or maple-mustard. Reheat leftovers at 380°F for 3 minutes.
