Copycat Starbucks caramel Frappuccino
Our take on the Starbucks Caramel Frappuccino: coffee, milk and caramel blended with ice until frosty, with whipped cream and a caramel drizzle.

Method
Stir the instant espresso into the hot water in a blender jug until dissolved. If you're using cold brew concentrate or chilled espresso, just pour it in instead.
Add the cold milk, 3 tbsp caramel sauce, the sugar, vanilla and xanthan gum, if using, then add the ice.
Blend on high until completely smooth and thick with no ice chunks left, stopping to push the ice down once if needed.
Drizzle a little of the remaining caramel around the inside of two tall glasses, pour in the blended coffee and top each with a swirl of whipped cream. Finish with the rest of the caramel drizzled over the cream and serve right away.
Tips
- Caramel in the blend and on top is what makes it taste like the original, and the pinch of xanthan gum gives it that thick, smooth, slow-melting body. Stick to 1/8 tsp or it turns slimy.
- If your caramel is too thick to drizzle, warm it in the microwave for 10 seconds.
- Freeze leftover coffee in an ice cube tray and use it in place of some of the ice for a stronger coffee flavor that doesn't water down.
