
Grilled honey chipotle chicken tenders
Spice-rubbed chicken tenders grilled over high heat, then brushed with a smoky, sweet honey chipotle glaze. Easy to eat by hand and great for a crowd.

Method
Heat a gas grill to high (about 450°F) with the lid down; allow about 10 minutes. On charcoal, light a chimney 15 to 20 minutes ahead. While it heats, pat the chicken dry and toss it with the oil, paprika, cumin, garlic powder and salt.
Stir the honey, chopped chipotles, adobo sauce and lime juice together. Pour about a third into a small separate bowl for brushing and keep the rest clean for serving.
Scrape and oil the grates. Grill the tenders, lid down, until well marked underneath, then flip.
Brush the tops with the brushing glaze and grill until the chicken reaches 165°F in the thickest part. Flip once more for 30 seconds to caramelize the glaze, watching that the honey doesn't burn.
Pile onto a platter, drizzle with the reserved clean glaze, and serve with lime wedges and cilantro.
Tips
- Tenders are thin and cook fast, so check with an instant-read thermometer rather than guessing: 165°F means they're done.
- Some brands of chipotles in adobo contain wheat flour, so pick a can labeled gluten-free if you need it to be.
- No grill? Cook them in a grill pan or heavy skillet over medium-high heat for the same time.
