Honey lime winter fruit saladSave

Honey lime winter fruit salad

Juicy orange segments, red grapes, kiwi, crisp apple and banana tossed in a bright honey lime dressing and finished with pomegranate seeds and fresh mint. It takes 15 minutes, looks lovely on a holiday brunch table, and a bowl about an hour before a workout is one of our favorite light, fruity snacks.

Method

  1. In a large bowl, whisk the honey, lime juice and lime zest until the honey dissolves, about 30 seconds.

    • 2 tbsp honey
    • 2 tbsp lime juice
    • 1 tsp lime zest
  2. Cut the peel and white pith off the navel oranges with a sharp knife, then slice them into rounds and cut each round into quarters. Add the oranges and any juice to the bowl.

    • 3 navel oranges
  3. Add the grapes, kiwis and apple and toss gently with a large spoon until everything is glossy with dressing. The lime keeps the apple from browning.

    • 2 cups red seedless grapes
    • 3 kiwises
    • 1 apple
  4. Slice the bananas straight into the bowl and fold them in gently so they stay in neat coins.

    • 2 bananas
  5. Scatter the pomegranate seeds and mint over the top and serve right away, or chill up to 2 hours.

    • ½ cup pomegranate seeds
    • 2 tbsp fresh mint leaves

Tips

  • Add the bananas last and only shortly before serving. They soften and darken if they sit in the dressing for more than a few hours.
  • Make ahead: cut the oranges, grapes, kiwi and apple and toss them with the dressing up to 1 day ahead in the fridge, then add the bananas, pomegranate and mint just before serving.
  • Before a workout, about 1 cup 30 to 60 minutes ahead is plenty. It is mostly quick carbs from fruit and honey, with little fat or fiber to slow you down.
  • Swap in clementines for the oranges (peel and separate the segments), pears for the apple, or a little maple syrup for the honey.
