Method

  1. Heat the broiler to high. Warm the refried beans, cream cheese, salsa and taco seasoning in an ovenproof skillet over medium heat, stirring, until smooth and bubbling.

  2. Spread the beans evenly and cover with the cheddar and Monterey Jack, then scatter over the jalapeño.

  3. Broil until the cheese is melted and browned in spots.

  4. Top with the scallions and serve hot, straight from the skillet, with tortilla chips.

Tips

  • No ovenproof skillet? Spoon the hot beans into a baking dish before adding the cheese.
