Method

  1. Halve the apples through the stem and scoop out the cores with a teaspoon or melon baller, making a generous hollow. Sit them cut side up in a microwave-safe dish.

  2. Rub the oats, sugar, walnuts, cinnamon and butter together with your fingertips until clumpy, then pack it into the hollows and over the cut surfaces.

  3. Pour the water into the dish around the apples, cover loosely with a lid or plate and microwave on high for 4 minutes.

  4. Check with a knife: it should slide in with no resistance. If not, give them another 1 minute.

  5. Leave covered for 1 minute (the juices are very hot), then serve with a dollop of yoghurt and spoon the syrupy juices from the dish over the top.

Tips

  • Firm, tart apples hold their shape. Softer varieties like Red Delicious collapse to mush.
  • For gluten-free, use certified gluten-free oats or swap them for flaked almonds.
