Stovetop apple crumble
Soft cinnamon apples cooked in a saucepan and showered with a buttery oat and almond crumble toasted golden in a frying pan. No oven needed.

Method
Peel, core and cut the apples into 1.5 cm chunks. Small, even pieces are what make this fast.
Melt 20 g butter in a saucepan over medium heat. Add the apples, 2 tbsp sugar, cinnamon and water, stir, cover and cook until just tender when poked with a knife, about 8 minutes, stirring once or twice.
While the apples cook, melt 30 g butter in a frying pan over medium heat. Add the oats, flour, remaining sugar, almonds and salt and rub together with a wooden spoon until clumpy.
Toast the crumble, stirring often, until deep golden and smelling nutty, 5 to 6 minutes. Tip onto a plate to cool and crisp up.
Uncover the apples, stir in the lemon juice and simmer for 2 minutes until the juices are syrupy. Spoon into bowls, pile the crumble on top and serve with cream, custard or ice cream.
Tips
- The crumble keeps crisp in an airtight jar for a week: make a double batch and sprinkle it on yoghurt.
- Swap one apple for a pear or a handful of frozen berries in the last 2 minutes.
