SavePeanut butter stuffed dates
Soft Medjool dates split open, filled with creamy peanut butter and finished with a drizzle of dark chocolate and a pinch of flaky salt. They taste like a candy bar and take about 10 minutes, so they are our favorite snack before a workout or an easy holiday treat.

Method
Amounts in the steps are for the original 4 servings. Use the ingredient list for your amounts.
Cut a slit lengthwise down one side of each date, open it like a little boat and pull out the pit.
Spoon about 1½ teaspoons of peanut butter into each date, pressing it in so the date is full and slightly mounded. Set them on a plate lined with parchment.
Microwave the chocolate chips in a small bowl in 20-second bursts, stirring between each, until smooth, about 1 minute in all.
Drizzle the melted chocolate over the dates with a spoon, then sprinkle with the chopped peanuts and a few flakes of sea salt.
Eat right away while the chocolate is soft, or chill for 5 minutes until it sets.
Tips
- Medjool dates are big and soft, so they open easily and hold plenty of filling. If yours feel dry, soak them in hot water for 5 minutes and pat them dry first.
- Before a workout, skip the chocolate and eat one or two dates with the peanut butter about 30 minutes ahead.
- Store leftovers in a covered container in the fridge for up to 5 days. Use a nut-free seed butter if you need them peanut-free.
